Healthy Breakfast Burger Recipe

INGREDIENTS

2 large eggs
1 cup spinach
1 tablespoon olive oil
Salt to taste
2 slices deli ham (any other burger bun)
2 whole-grain English muffins (split and toasted)
Hot sauce or tomato ketchup (optional)

DIRECTIONS

Step 1: In large non stick pan heat oil at medium heat

Step 2: In a small bowl whisks the eggs with one pinch salt and a pinch pepper

Step 3: Take spinach cut it into one inch size and boil for 2 to 4 minutes and then instantly in cold water, so that the spinach should not lose its color

Step 4: Now Fry egg the way you wish or like to eat, for 2 to 3 minute slightly runny yolks.

Step 5: Form 2 sandwiches with the English muffins, stuff inside it with fried egg mixture 

Step 6: Season with ¼ teaspoon each salt and pepper and if you like to spice to it you can even sprinkle some red chili flakes.
